How is Grass Fed Beef Different from "Regular"/grain-fed Beef?

Obviously, grass fed beef is only fed grass (hay) while other beef is fed corn/silage at some point in its lifetime. Grass fed beef is leaner, so extra care should be taken in cooking to ensure it doesn't dry out.

How is Hanging Weight different from finished/take-home weight?

When steers are ready to be butchered, they generally weigh about 1,200 lbs (live weight).

After the beef has been dressed and hung to age, the hanging weight will be about 60% of the starting weight - 720 lbs (180 lbs per quarter).

Once the beef has been cut up and packaged, you will receive about 60% of the hanging weight -  110 lbs finished/take-home weight (per quarter).

Buying Your Beef

What is the minimum i can purchase?

Due to USDA regulations, we are only certified to sell wholesale beef. The smallest amount we sell is a mixed 1/4 (some front and some hind).


HOW MUCH SPACE WILL I NEED IN MY FREEZER TO STORE 1/4 BEEF?


3 - 4 cubic feet, which is about the size of the freezer side on a side-by-side fridge/freezer.



HOW MUCH DOES WHOLESALE BEEF COST?


Starting in 2024, pricing will differ depending on what is ordered.

For a quarter, we charge $4.10 per pound hanging weight with a $1.35 per pound butcher fee, as we work alongside a professional butcher in packaging our beef. (about $950 for a quarter)

A half or a whole steer will cost $4.00 per pound hanging weight with a $1.35 per pound butcher fee. (about $1,600 for a half and $3,200 for a whole) 

Delivery, packaging, labelling, and freezing are all included in these prices.



HOW MANY CATTLE DO YOU BUTCHER EACH YEAR?


Since we are a growing business, this number is increasing. In 2019 and 2020 we butchered 2 steers; 7 steers in 2021; with the goal to now maintaining butchering 12-15 each year in the early summer.


DO YOU PROCESS ANY OF YOUR BEEF (JERKY, STICKS, ETC)?


We are not set up to do this yet, but hope to build a smoke house and test these waters soon!
